Beef prices based on hanging weight
Wholes, halves, and quarters are priced according to hanging weight of 450-650 lbs for a whole, 225-325 for a half, and 110-160 lbs for a quarter. Actual cuts total approx 70% of hanging weight.

Standard cuts you'll receive with each order of a whole, half, or quarter beef
ROASTS, typically 3.5-4 lbs: Sirloin tip, bottom round, eye of round, chuck.
STEAKS, approx 1" thick: T-bone, Porterhouse, sirloin, tenderloin, rib, top round.
PLUS: Stew meat, ground beef.

   Whole beef
$3.45/lb hanging wt of 450-650 lbs, yielding approx 375 lbs of cuts.
 
   Half beef
$3.45/lb hanging wt of 225-325 lbs, yielding approx 190 lbs of cuts
 
   Quarter beef
$3.55/lb hanging wt of 110-160 lbs, yielding approx 95 lbs of cuts

Pork prices are based on hanging weight of approx 300 lbs for a whole, yielding approx 155 lbs of cuts.

ABOUT OUR PORK CUTS
All cuts are available as fresh or cured/smoked. Fresh cuts available as soon as the pig is processed. Cured/smoked cuts are available after 10 days in a salt/brown sugar cure and 24 hours in the smokehouse. Hams and bacon are the most popular cured/smoked cuts. you can choose a light or heavy cure. Curing 60¢/lb extra.

   Whole pork          
$3.20/lb hanging weight of approx 300 lbs, yields approx 155 lbs of cuts

    Half pork
$3.30/lb hanging weight of approx 150 lbs, yields approx 75 lbs of cuts
